Banana Nut Sourdough Muffins
I was trying hard to come up with some easy recipes with my sourdough starter this week and this one came to mind. I always make muffins each week but wanted to add in the sourdough to see if it made a difference in the recipes! They came out extra fluffy and delicious!

Banana Walnut Sourdough Muffins
Serves: Makes 11-12 Muffins
Ingredients:
3 ripe bananas
2 cups oat flour
2 eggs
1/2 cup honey
1 tsp vanilla extract
1/2 cup sourdough starter
1/2 cup walnuts
1 tsp baking powder
Directions:
Mix together wet ingredients.
Add dry ingredients to bowl and mix.
Add walnuts last and mix until well incorporated.
Scoop by 1/4-1/2 cup increments into a greased muffin tin.
Bake for 30 minutes on 350 or until cooked through. Don’t overcook!
