Busy Mom Meal Prep | 3 Ingredient Egg Bake

Summer is here and memories are loading :). This summer my goal is to be disciplined. Disciplined with my time, my health, my children, my work, and my home. What does that mean exactly? For the purpose of this blog post it means being prepared. I want to have healthy food in my refrigerator that I can grab and eat whenever it’s time to eat. No forgetting to eat, no low blood sugar and ‘hangry’ mama. Although, I don’t get hangry as much as I get lightheaded and anxious when I get hungry. Weird, but that’s what happens! So, I am going to be disciplined to prep and be prepared with food in my fridge and on my counters for easy snacks, breakfasts, and lunches. I do not want to be waking up making a full breakfast everyday for myself or the kids! I want time before daycare or camps to be able to relax. So, this week I prepped this yummy 3 Ingredient Egg Bake. Full of protein, cheese, and veggies. It’s a great combo that you can throw in the oven in the morning while you’re reading your devotional! I paired it with my 2 ingredient protein bagel, and some fruit for a really well-rounded delicious breakfast, that is also so filling!

The recipe is simple:

  • 6 eggs

  • 1 cup cottage cheese (I used Daisy because it was on sale but I usually use Good Culture)

  • 2 cups frozen veggies (I used a blend we get from Costco!)


    Mix up the eggs and cottage cheese first in a pre-sprayed pan, then add the veggies. Bake at 350 for about 30 mins. And enjoy! I stored mine in a glass airtight container. I am not a food scientist but I think it’ll last all week! You can make it into muffins if you want too! I’ve done this a variety of ways, for my kids I would do muffins, instead of veggies I would do bacon or sausage. I also saw a great recipe that was ‘french toast muffins’. Stay tuned because I’ll be testing that one out! :)
