Pizza Pinwheels
Craving pizza but wanted to make something super fun for the kids… so I saw this inspiration for pizza pinwheels. You can make this recipe a few ways but I made it gluten free so I could enjoy them without stomach upset :). I’ve been eating mostly gluten free for the past year now and it helps with my digestion. So the few ways you could make this to make it easier on yourself is with crescent rolls. That would be the easiest & fastest way. Sub the dough for crescent rolls and all you have to do is add in the sauce & cheese - and bake! I made the dough from scratch but they also make gluten free crescent roll dough. So many opportunities to be fun here!
Ingredients:
Crust:
2 cups gluten free flour (I use King Arthur 1:1 flour) + 1/2 cup
1 package yeast
1 tsp sugar
1 cup warm water
To make the crust you add the package of yeast to the warm water, and sugar and let flower (until it’s bubbly). Then you add to 2 cups of flour and mix until combined. Cover with a towel and set aside for about an hour to an hour and half depending on how warm your house is. It’ll eventually rise to almost double the size. This dough is super sticky. If you use regular all-purpose flour your dough won’t be as sticky.
Once the dough is ready you will dump it out to your pre-floured counter. I added probably about another 1/2 cup of flour to the dough as I was rolling it out. It helped make it less sticky. Feel free to add more if you need to! It shouldn’t mess the recipe up!
I rolled the dough out to about a 1/4-1/2 inch thick. To make the pizza - you spread out your favorite pizza sauce on the dough, then your favorite cheese. I also added some pepperoni and chicken sausage! Then you’ll roll it up like a log. I found it easier to cut the dough into 3 parts then roll it. Once rolled, I cut into small pinwheels. I baked close together on a baking sheet covered in parchment paper. I baked at 400 for about 20 minutes.
The kids loved these, and I did too! You could definitely free these to snack on or heat up as the week goes on. Making this the perfect meal prep food!
