Snow Day Recipes
There is no view I enjoy more than seeing snow out my back windows. It is the most calming and peaceful view for me. Seeing snow outside encourages me to cuddle up under my weighted blanket with my babies, a cup of hot coffee (or wine), and watch a movie. I’m a snacker and always love making fresh snacks for my son. I also love to make yummy soups this time of year.
Here are two of my favorite recipes for snow days - and any cold day!
Homemade Popcorn
Ingredients:
1 Cup Popcorn Kernels
2 Tbsp. Olive Oil
1 Tsp. Himalayan Salt
Directions:
Add oil to large soup pot. Meanwhile measure out popcorn.
Add popcorn and salt to pot and put the lid on so the popcorn doesn’t pop out of the pot!
Put in a large bowl and enjoy!
I like to top with chocolate, sprinkles, or other fun things that will make my son excited!
Melt-In-Your-Mouth Onion Soup
Ingredients:
10 Onions - cut to your liking
2 boxes Chicken Stock, Bone Broth (for extra protein), or Veggie Stock
2 Packets Onion Soup Mix (or MYO - 2 Tbsp Garlic, 2 Tbsp Onion Powder, 1/4 tsp. Chili Powder, 1 tsp. Pepper, 1 tsp. Salt)
1/2 Pound American Cheese (or Vegan Mozzarella Cheese)
1 Loaf Sour Dough Bread - *optional
Directions:
Chop onions in strips and cook on stove in dutch oven until tender.
Add broth, and spices. Heat until simmering. Remove from heat and fill crocks leaving about 2 inches.
Chop bread (if adding) and add to crocks. Top with Cheese.
Cook in the oven on 450 until cheese is bubbly and brown.
Eat and enjoy!
Soup is good for 1 week in fridge. Freezes well. I usually freeze in mason jars so I have individual servings for when I’m craving this soup!
